White Tea

White tea is a special type of tea: it is made from young leaves (new growth buds) that have undergone no oxidation. It is produced in lessser quantities that other types of tea and is usually more expensive. The young leaves produce light teas with subtle aromas. White tea contains very little caffeine and is very rich in anti-oxidants.

Green Tea

Green tea is made from leaves that have undergone only a minimal amount of oxidation. Oxidation can happen with steam (for example Japanese Sencha) or by dry cooking in hot pans (China).

Oolong Tea

Oolong is Chinese for “black dragon”. For this type of tea, the leaves undergo an oxidation process of two to three days. This reduces the grassy taste that green tea is known for. Chinese Oolong and Ceylong Oolong undergo a different process.

Black Tea

For black tea, tea leaves are allowed to completely oxidize. The oxidation process can take around two weeks and up to one month. This is the most common type of tea.

Yellow Tea

Yellow tea is relatively rare that undergoes a complicated process. It is very rich in anti-oxidants.

Pu-erh Tea

Pu-erh is made from the subspecies camellia sinensis assamica and exists in two forms: “raw” and “ripened”. Raw or green pu-erh may be consumed young or aged. During the ageing process, the tea undergoes a second, microbial fermentation. Ripened pu-erh is made from green pu-erh that has been artificially oxidized to approximate the flavour of the natural aging process. Pu-erh tea stimulates the digestion.

Scented Tea

Scented tea or flower tea is black tea or green tea (or any other tea) scented with flowers (for example, jasmine) or other ingreadients. Originally, tea was scented to disguise the taste of low-quality tea. This is still the case with many commercially produced flower teas. Well-known examples of scented tea are jasmine tea, Earl Grey (black tea with bergamot citrus fruit essence), lychee tea and mint tea.
